In many ways, it is the heart of Bannockburn Chardonnay: a consistently brilliant expression of our site that has helped define our house style.\u003c\/p\u003e\n\u003ch4\u003eViticulture\u003c\/h4\u003e\n\u003cp\u003eWinery Block was planted in 1981 to P58 Chardonnay and remains our largest single vineyard site. While it typically ripens early, picking is spaced over many days to reflect variation across the 5.3-acre block. This single vineyard selection is made each year based on the vintage conditions. The vineyard is gently south facing with dark brown clay at the upper end of the site giving way to sandier soils lower down over weathered basalt and limestone.\u003c\/p\u003e\n\u003ch4\u003eWinemaking\u003c\/h4\u003e\n\u003cp\u003eHandpicked parcels of fruit were whole bunch pressed, settled overnight, and racked to barrels for a wild yeast fermentation in French oak hogsheads; approximately 40% was new oak. Malolactic fermentation occurred naturally on 75% of the blend and completed in spring. The wine was left on lees, mostly unstirred, for 10 months prior to blending and bottling.\u003c\/p\u003e\n\u003cul\u003e\u003c\/ul\u003e\n\u003cul\u003e\u003c\/ul\u003e\n\u003ch4\u003eTasting Note\u003cbr\u003e\n\u003c\/h4\u003e\n\u003cp\u003eAromas of citrus, straw, bread dough and baked apple, with a distinct petrichor note and a whisper of struck flint. It's savoury and gently reductive, wild honey and grilled peach sitting within. Classy oak sets it up for the long haul. On the palate, concentration sits with restraint: ripe stone fruits and custard characters carry real depth without excess, framed by fresh citrus acidity and a long, salty, mineral finish. Saline and taut, it's grippy and tight.
